The Macaroni Week
Last week I was craving for KFC’s macaroni salad but I was broke and felt like I’d be tempted to order the chicken meal too if I went there. Since I’ve been thinking of trying out new things, I decided to make my own. The recipe calls for simple ingredients but I only used carrots, pickle relish, pineapple, mayonnaise, all purpose cream, evaporated milk, and cheese. I bought a big bag of macaroni and cooked it all. I then realized that it was too many but it gave me an opportunity to try it with different sauces. I used half to make my salad, and kept the rest for another day. My mom doesn’t follow recipes, she makes each dish her own, and I think it rubbed off of me because I didn’t follow any recipe, I dumped everything together and winged it.
It wasn’t bad. Mom liked it but we both think it was missing something. I accidentally put too much pepper but mom said it was okay.
The next day I woke up hungry and no food was available. I wasn’t in the mood to make something that’ll take time so I got a plateful of macaroni and mixed it with pesto and a bit of extra virgin olive oil. Voila~ instant pesto macaroni for brunch.
I had pesto again the next day. After that, I was in the mood for something else. I found a small pouch of Italian pizza sauce, added a bit of cream and evaporated milk, and thawed beef meatballs, waited for it to simmer and topped it off a plate of macaroni. It was pretty good, plus the meatballs were really, really tasty.
Mom used the remainder of the macaroni and made beef sopas. I could have sworn I took a photo of that but I can’t find it in any of the cameras I use.
One night mom brought home baked macaroni, it was good.
I’ve consumed a lot of carbs in the past week, I should do something about working it off. But not just yet. 😀
